Halal Truck Chicken Over Rice
Let's switch it up a bit with this super easy crowd pleasing NYC staple. Chicken over rice with white sauce and a dash (or more) of hot sauce is a right of passage for most people either visiting the city or calling the concrete jungle home.
Here's the TQM way for this satisfying staple.
For the Rice:
1 1/2 Cups Basmati Rice
1 Small Yellow Onion (Chopped)
1 Tbsp Cilantro chopped
3 Cups Chicken/Vegetable Broth
1 Tsp of Ajwain seeds
1 Tsp Cumin seeds
1 Tbsp Canola Oil
1/4 tsp black pepper
1/2 tsp salt (adjust to your taste) TQM Flavor Boost: Replace spices and onion with 3 tbsps of TQM Candied Ginger and Tamarind Chutney
Heat Medium Sauce Pot and add oil. Saute onions and coriander until onions are just cooked and fragrant. Add bell spices and cook for another minute. Combine rice and heat through stirring occasionally. Add Salt, pepper and chicken stock. Bring to a rapid boil then lower heat and simmer covered for 15 minutes.
Let rest for 5 minutes, fluff then serve.
For the Chicken:
1 1/2 Lbs Boneless chicken thighs (Cubed) 1 Tbsp. Lemon Juice 1 Tsp. Chopped Oregano 1 Tbsp. Parsley chopped
1 Tbsp Coriander leaves chopped 3 Cloves Garlic
1 Tsp Ajwain seeds
3 Tbsp. Canola Oil
1 Small Onion (Chopped)
Salt and Pepper to taste
(About 1 Tsp salt and 1/4 tsp pepper)
TQM Flavor Boost:
2 Tbsp TQM All Purpose Green Seasoning to replace blended seasoning step.
Using a blender or food processor, combine all spices and herbs with lemon juice and 2 tbsp. oil. Marinate chicken for at least 15- 20 minutes. Heat pan with remaining oil and sear chicken pieces for 2 minutes each side until browned.
Cover with lid and cook on med-low heat for an additional 12 minutes or until juice runs clear.
White Sauce (Optional) 1/2 Cup Mayonnaise 1/2 Cup Plain Yogurt 2 Tbsp Lemon Juice 1/4 Cup Fresh Parsley Salt and Pepper to taste
TQM Flavor Boost:
Replace lemon juice, salt, pepper and herbs with 1 tbsp TQM All Purpose Green Seasoning
Combine all ingredients and serve on the side
This meal is especially delicious with a fresh garden salad. Chopped lettuce, tomatoes and cucumbers will do.
