Caribbean Chicken Tortilla Soup



A lot of us are experiencing colder weather these days, so naturally we will seek out more comforting, nourishing meals. One of the most nutritious and satisfying things on a cold or rainy day is a hot bowl of delicious soup.

Well here's a easy recipe for Caribbean style Chicken Tortilla Soup using TQM Island Style Soup Mix.

Substitution ingredients also provided below.


Ingredients: 1lb diced boneless chicken

2 carrots diced

2 Plum tomatoes diced

1 cup crushed tortillas

2 cups yuca diced

2 heaping tbsps TQM Island Style Soup Mix

8 cups of water

1tbsp vegetable oil

1/2 tsp salt Fresh chopped parsley or cilantro to garnish


Heat sauce pot then add vegetable oil (medium heat). Add chicken pieces and brown, letting it cook about 2 minutes on each side. Add water and salt then bring to a boil, cooking for 10 minutes. Stir in TQM Soup Mix, Tortillas and vegetables. Cook on Medium-Low for 15-20 minutes. Remove from heat and check for appropriate salt level. Garnish with fresh herbs and serve. Recipe makes 4-6 servings.


Substitute TQM Island Style Soup Mix with:

1 tsp thyme

1 tsp onion powder

1 tsp rosemary

1 tsp salt

1/2 tsp sugar

1/2 tsp lemon zest

1/2 tsp garlic powder

1/2 tsp basil

1/4 tsp ginger powder

Black pepper/chillies to taste

Additionally, you can add

1/4 cup chopped bell peppers

1/4 cup drained spinach
