Blackened Berbere Chicken
Berbere is an Ethiopian staple spice blend with big, bold flavor. Expect a robust, nutty taste with lingering heat.
Here's a quick recipe you can use for weeknight dinner or prepare ahead of time for the next day's salad protein.
Ingredients:
1.5 lbs chicken breast
2 tsp TQM Ethiopian Berbere Spice
3 tbsp EVOO
Lemon and fresh herbs to garnish
Method:
Clean chicken and pat dry with paper towel. Add TQM Ethiopian Berbere Spice to 1 tbsp of EVOO. Coat chicken pieces with spice mixture and let marinate (refrigerated) for 15-20 minutes. Remove from fridge and let it relax for 5 minutes. Heat a hard bottom skillet with remaining oil and sear chicken pieces on med/high heat for 2 minutes on each side or until golden brown. Cook covered in oven at 330 degrees for 20 minutes/internal temperature is 165. Juices should run clear. Garnish with fresh herbs/lemon and serve with rice or pasta.
